Grapes: 100% Falanghina
Year of planting Vineyards: 2012 – 2018
Soil: clayey – calcareous
Altitude: 560 m above sea level average vineyards
Exposure: south-west
Training and density: Guyot 3500 vines/ha
Production: 65 ql./ha
Harvest period: end of September beginning of October
Harvest: manual in boxes
Vinification: crushing-destemming, maceration for about 3 days and subsequent pressing. Spontaneous fermentation in steel at controlled temperature.
Aging: in steel for 6 months and another 3 in the bottle.


HOW MACERESE WAS BORN
Our first adventure on maceration, after the official presentation at Vinitaly 2022, here is MACERESE a wine from macerated Falanghina grapes, obviously the name comes from the play on words with CESE, the name of our Falanghina vineyard and MACERATO, this wine expresses our desire to recall the local tradition that includes, even for white wines, maceration with the skins. It is a tribute to the past that lives again in the present and looks to the future.
This is MACERESE, three days of maceration with the skins and then separated to continue the fermentation in white. The citrus nuances, classic of maceration, and the varietal aromas compete for the scene, with an intense and persistent taste. All you have to do is try it.

We risk repeating ourselves, but it is perfect on all fish-based dishes and Mediterranean cuisine in general, but what you can do with a macerated wine is to dare. In fact, the more full-bodied and rich structure allows you to pair it with dishes such as sausage and broccoli rabe, a typical dish of our area, or even with baked lamb ribs or for those who love to dare with cheeses with MACERESE you can certainly do it, a combination that I challenge you to try crostini and gorgonzola.
And finally, a classic that never goes out of style, handmade pasta with porcini mushrooms, a spectacle.
